What is the dry time for "marble" glue, before you grout?

I would not use a "glue" per say.no mastic or premixed thinset.

you should only use a dry powdered thinset you mix with water and additive.

How long does it technically need to "set" before you can grout marble?

We, in the Industry, prefer that you use Portland Cement based products. There are mastics being sold for this purpose but why would you invest all the time and money on a "maybe". Some mastics or "glues", as you call them, will even bleed thru the stone. Thin-Set Marble Mortars are LESS expensive but also work the best. Buy the "powder" add the water, mix for two minutes, let if slake for 10 and then set your stone after you skim coat the floor and the backs of the marble or granite tiles. Use "Tavy" 1/32" "Marble Spacers" for minimal grout joints, and the Tavy "Tile Puck" to help you lay a flat and level floor. Armen Tavy
